ลำไย เป็นไม้ผลที่มีการเพาะปลูกอยู่ในหลายพื้นที่ของจังหวัดปราจีนบุรี ลำไยมีคุณประโยชน์มากเนื้อและเมล็ดลำไยเต็มไปด้วยสารอาหารและสารพฤกษเคมี เช่น น้ำตาลฟรุกโตส น้ำตาลกลูโคส โปรตีน สารประกอบโพลีฟีนอล แต่จากปัญหาด้านราคาในฤดูกาลผลิตที่มีผลผลิตออกสู่ตลาดจำนวนมาก กระทบต่อราคาและเป็นปัญหาที่ชาวสวนลำไยประสบมาเป็นเวลานาน โครงการวิจัยนี้จึงปรับปรุงกระบวนการผลิตสารสกัดลำไยโดยใช้ลำไยสดมาผ่านกระบวนการหมัก ทำให้ได้สารสกัดลำไยและผลพลอยอย่างแอลกอฮอล์กลั่น ซึ่งสามารถนำไปต่อยอดในเชิงพาณิชย์ได้

Longan is a subtropical and tropical fruit tree that is cultivated in many areas of Prachinburi Province. Longan fruit has many benefits; the longan pulp and seed are rich in nutritional and phytochemical substances such as fructose, glucose, protein, and polyphenols. However, due to the pricing issue, the fluctuation in the price of longan during the harvesting season has affected the farmer for a long time. This research project was to improve the longan extract production process by using fresh longan as a medium in the fermentation process. Longan extract and distilled liquor are the main products from the fermentation process. The result showed longan extract and distilled liquor could be further developed commercially.
